Basically, I do not have any recipe for this particular muffin because I just throw everything in one bowl and mix it all together but I will try my best to explain how to make it. If anyone decides to make this and follow how I make it, I hope it is not messed up.
I may fail the macaroons but hey at least my muffin does not turn out that bad :)
Coconut Muffins
250g shredded coconut
150ml sweetened condensed milk
I mixed this both together because it was for macaroons in the first place. And then I add :
1cup flour
1/3 cup canola oil or 1/2 cup butter
1tsp baking powder
1tsp baking soda
2 eggs
4tbsp milk
And mixed it all together with a spatula or wooden spoon. I do not add sugar because the condensed milk is freakishly sweet enough. But if you don't have condensed milk you can substitute it with sugar about 2/3 cup. Don't forget to preheat the oven to 325° F and bake it for 20-25 minutes, until when you insert toothpick it comes out clean.
I love how simple these are but yummy looking!!!
ReplyDeleteYum, these look super delicious! Lovely photos. :)
ReplyDeleteI give you credit for not simply eating the rest of the macaroon batter straight up! (Not saying that's what I would do, or anything...) The end result looks delicious, however, so waiting might not be so bad.
ReplyDeleteI found you on TasteSpotting and am writing to say that if you have any photos that aren’t accepted there, I’d love to publish them. Visit my new site (below), it’s a lot of fun! I hope you will consider it.
Best,
