Shrimp Vegetable Mango Curry
2 medium potato, chopped
2 carrots, chopped
16 shrimps (more if you like)
1 onion, chopped (any kind, I used red onions because I don't have other types)
1 341ml VH Mango Curry cooking sauce
1 398ml coconut milk
2 tsp salt
cilantro
1. Chopped the potato into cubes, carrots and onions.
2. Pour half can of the coconut milk into the pan, salt and 4-5 tbsp mango curry sauce.
3. Cook the vegetables in the sauce until it's a little tender.
4. Add the rest of the coconut milk, shrimps and add more of the sauce (as much as you like, but I didn't use the whole bottle of the sauce)
5. Mix everything together until it's cooked.
6. Garnish with cilantro.
Serve with naan bread.
PS. This recipe is good for vegetarian too, just don't add shrimps.
