velvety cupcakes

There's a lot of cupcake recipes and red velvet probably is the most popular (I guess?)
I kind of missed red velvet cupcakes by Sprinkles in California. In any case, I made red velvet cupcakes. Instead of making all of the cupcakes red, I made another color that is blue.
I was inspired by this 1986 movie called Blue Velvet. And for a change, I add a little bit of mint on the cream cheese frosting instead of vanilla. It turns out awesome. Recipe is courtesy of Cupcake Bakeshop, and modified a little by me.


Red & Blue Velvet Cupcakes







makes 20 cupcakes / 350 degree oven

2 cups cake flour
1/4 cups cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder or 1/2 teaspoon cream of tarter
3/8 teaspoon salt
1 cups buttermilk
2 teaspoons vinegar
1 1/2 teaspoons vanilla
1/2 ounce red & blue food coloring
2 cups sugar
3/4 cups butter
2 eggs

I divide the ingredients above into two bowls, for red and blue color.

1. preheat oven to 350°F
2. sift flour, cocoa powder, baking soda, baking powder (or cream of tarter), and salt into medium bowl
3. whisk buttermilk, vinegar, vanilla, and food coloring in small bowl to blend
4. beat sugar and butter in large bowl until well fluffy, 3 minutes
5. add eggs 1 at a time, beating until well blended after each addition, about 30 seconds
6. beat in dry ingredients in 4 additions alternately with buttermilk mixture in 3 additions
7. scoop into cupcake tins
8. bake cupcakes until tester inserted into center comes out clean, about 20 minutes
9. cool in pans 10 minutes
10. cool completely on racks

Minty Cream Cheese Frosting

1 4oz Philly Cream Cheese
1/2 stick butter
1 1/2 cups powdered sugar
1 tsp mint extract

1. beat cream cheese and butter until creamy at medium speed.
2. add powdered sugar and beat until it is all mixed.
3. add mint extract and mixed it again.
